Shrimp-stuffed mushrooms

This is quick and easy. The filling also goes great on crackers, as an appetizer by itself.

1 can (about 4 oz) shrimp
1 container (4 oz) whipped cream cheese with chives
20 or so large mushrooms
Shredded cheese (cheddar or whatever you like).

Clean mushrooms, and remove stems. I've used a small spoon to make more room for stuffing, if required.

Simmer mushrooms for 2 minutes in boiling water to soften. Drain, invert, and put in fridge to cool.

Chop shrimp finely, and mix thoroughly with cream cheese.

Place mushrooms (stem side up) in baking dish. Fill mushrooms with stuffing, and sprinkle liberally with cheese.. Never enough! Cover and chill for 3 to 24 hours.

Before serving, uncover, bake in 400F oven for 15 minutes.
